Ingredients for:
Cheesecake with pears

3 pears
1 lemon untreated
soft white cheese 250g smoothes (standard jockey) to 40% of chechmate. gr.
8 biscuits with the spoon
40g of flour
2 eggs
sugar 40g
1 vanilla sugar sachet
butter 25g softened 20g salt
3 cuil with soup of apricot jam


Preparation for:
Cheesecake with pears

1 Prepare the cake the day before: preheat the furnace on 180°/350 F.
Butter a mould with missed.

2 Crush biscuits with the spoon with softened butter 25g, to obtain a thick paste.
Spread out it over the bottom of the mould and then place it at the refrigerator.

3 Mix with the whip the egg yolks with soft white cheese.
Incorporate the flour and the finely grated peel of lemon.

4 Montez the white snows about it with a salt pinch.
At the end of the operation, add two sugars.
Incorporate in the preceding mixture.

5 Peel pears and cut 2 in districts.
Pour the paste in the mould.

6 Recover pear districts and insert them in the paste.
Cut last pear in fine plates and lay out them on the cake.

7 Charge and make cook during 1 hour. Withdraw furnace.
Let cool.

Unmould the cake on a dish of service.

7 Make warm the apricot jam to liquify it.
Filter it through a fine strainer. Using a brush with pastry making, whitewash the surface of the cake.
Be used your cheesecake for quite fresh pears.
